Coffee roasting: A guide for beginners

The journey of coffee starts with green beans. The green beans undergo a process of roasting and brewing to deliver the tasteful coffee we get. Be it arabica, latte, espresso, cold brewed, or catimor roasted coffee. Every variety starts with the raw green bean.

In this feature, we will share how the raw green beans turn into aromatic coffee that satisfies us every day.

1. Drying the green beans

Before we start the roasting, we need to dry the green beans since they have a humidity of around 10%. The drying process needs about 6 to 8 minutes. The temperature should be controlled while drying the beans as overheating can burn them.

2. Browning the beans

In the Browning stage, natural sugars and amino acids in the beans start to react and form flavors and the characteristics of the actual coffee. After the process continues further, a crack appears. This means the beans have started expanding. This brings us to the next stage.

3. Roasting the beans

During this process, you can customize the taste. This step follows a set of trials and errors to shape the taste profile as preferred. During roasting, the expanded beans release the heat that leads to form aromatic compounds. The two important terms you should be aware of during the roasting are explained below.

• Roast Degree

The roast degree means the amount of heat that brings a fruity or burned taste to the beans. The color of coffee beans also indicates if the beans are lightly or darkly roasted. Lightly roasted beans (catimor variety roasted coffee) have a fruity taste, while darkly roasted coffee beans have a burned taste. It is better to assume that lightly roasted beans taste better.

• Roast Time

Roast time is also crucial in the coffee roasting process. If you roast fast, you create aromatic coffee but risk burning them. Hence, slow roasting is the way to have control over the flavor development of beans.

4. Cooling the beans

The roasted beans need to cool to stop the roasting process. This process doesn’t require much control from your end. It takes hardly 4-5 minutes which marks the end of roasting.

5. Clearing the waste products

The second last step in the process is to clear the waste generated during the brewing process.

6. Testing the results so far

Cupping is done to test the outcome of the roasted coffee. It is a well-known process to find the roasting results. This process relies on the skills and experience of the person who tastes the coffee.
